Holmach are thrilled to be featured in Food & Drink Technology as part of a collaborative project investigating potential improvements to nutritional quality and shelf life of baked goods through the use of sprouted grains.
Innovate UK has granted £650,000 to the research group, including Everfresh Natural Foods, Camden BRI and Holmach, who will work together on the developing products. Initially, the research focus will be on identifying which sprouted grains from oats, wheat, rye, spelt and barley, produce an optimal product, without detrimentally affecting the taste or texture.
A focus for later research will also be pulses, to explore whether these could be a viable option for increasing protein levels in products. In terms of acceptability from the average shopper, the marketability of NPD efforts will then be assessed by independent consumer group testing.
Having established a grain or pulse basis for the product, following investigation will explore how pasteurization, in this case involving steaming the product once packaged, is able to extend food shelf life in order to reduce future wastage. This work will also include assessment of novel packaging materials and technologies to ensure it is cutting edge in food safety optimization, as well as reducing plastic usage by promoting a nearly 100% recyclable product pack format.
Once complete, the project will look at scalability and commercial application of the agreed method and approach.
